The NEW 2025 L.A.S. Vino Collection

We have succumbed to customer pressure…

We have received countless requests to release the new L.A.S. Vino collection early, particularly from last year's buyers who, quite understandably, do not want to risk missing out.

So, we have given in… Our purchase was based on samples received earlier in the year and, as you can probably tell, we were enormously impressed. I relish the opportunity to re-taste the entire collection once it arrives and will provide my usual detailed tasting notes thereafter. For now, given the number of requests we have received (and the limited quantities available) the collection is officially open.

There are some collections which simply remind me why I love what I do, and the new releases from L.A.S. Vino fall firmly into that category. I have tasted a lot of wine over the years, and I don't use the word ‘exceptional’ lightly, but these wines truly are. Collectively, this is one of the most exciting sets of wines we have received from the Margaret River and, personally, I believe they underline just how special this producer has become.

There is an extraordinary sense of individuality running through the collection. Nothing feels formulaic or designed to fit neatly into a particular category, which has been a previous issue with some Western Australian wines. Instead, each wine begins with a vineyard, a place and Nic’s adventure… The winemaking follows from there.

The Chardonnays provide a brilliant example. Barrels of Metricup offers warmth, generosity and texture from its certified-organic Metricup site, whereas the new Southern Seas looks towards the cooler, southern end of the Cape, influenced by both the Indian and Southern Oceans. The latter is beautifully fresh, saline and mineral – think Prem Cru Chablis with a bit more oomph. Two Margaret River Chardonnays, but two completely different expressions of place. ’24 Barrels of Metricup was our 2025 Wine of the Year. The 2025 is even better…

Then we move into altogether more unconventional territory. The remarkable biodynamic vineyard at the northern end of the Cape provides fruit for wines which challenge many of the accepted rules of viticulture. Vines sprawl, animals roam freely amongst them, native plants grow beneath the rows, and nature is allowed a far greater say in proceedings. The resulting Sauvignon Blanc is quite unlike traditional Sauvignon Blanc - textural, complex, saline and utterly fascinating. I ask you to set aside any prejudices you may have for this varietal, as this is Sauvignon Blanc viewed through an entirely different lens. Wine is a journey, and this is a wonderful one to take…

 The CBDB Chenin Blanc Dynamic Blend takes another perspective on this same extraordinary site, embracing the natural variation in ripeness across the vineyard rather than attempting to engineer it away. Again, it is the vineyard rather than convention which dictates the wine.

And then there is a genuine first for L.A.S. Vino – A Pinot Noir. Inspired by time Nic spent working a vintage in Burgundy and produced from approximately 40-year-old vines on the family estate, just three kilometres from the Indian Ocean, this is a wonderfully aromatic, refreshing and beautifully judged debut. These are amongst the oldest and increasingly rare Pinot Noir vines remaining in Margaret River.

Finally, we have the 2023 Pirate Blend (our fastest sellout last year). Touriga Nacional, Tinta Cão and Sousão from 40-year-old, dry-grown vines in Yallingup. Exotic, silky, spicy and gloriously individual, it feels entirely appropriate that a wine dedicated to rule-breakers should sit within this collection.

What I particularly love is that none of these wines could be mistaken for another. Each has its own identity, its own story and, importantly, a genuine sense of place. There is experimentation, certainly, but never experimentation for its own sake. The wines are precise, thoughtful and, above all, absolutely delicious. We are incredibly fortunate to have access to wines of this quality in the UK. L.A.S. Vino is tiny, production is limited, and there simply isn't much wine to go around for Nic’s export market. To be able to bring these wines directly to our customers - particularly as the range continues to evolve and push boundaries - is something we are enormously proud of. I hope you enjoy discovering them as much as I have.

2025 L.A.S. Vino 'Barrels of Metricup' Chardonnay

Ray Jordan “It’s a wine of incredible power and concentration, yet there is finesse and subtlety... The aim was to hardly touch the wine as it went through the process, and it captures everything expected from the power and richness of the Gingin clone. There’s lively energy and brightness from the citrus and lemony characters, followed by the richer opulence of the meringue and stone fruit palate. That subtle savouriness on the finish completes what is an outstanding wine.”

  Vineyard
This is the fourth release from this exceptional certified-organic vineyard in the heart of Metricup, Margaret River. The 24-year-old Gin Gin Chardonnay vines are planted on sandy-loam topsoil over mottled clay - a distinctly different profile from the forest loams and mottled granite more commonly associated with Willyabrup.

 Winemaking
The fruit was hand-picked, chilled and hand-selected before being whole-bunch pressed. Fermentation took place in ten barriques, just two of which were new. The wine underwent full malolactic fermentation, with fortnightly lees stirring, before spending ten months maturing in barrel. It was then blended and bottled unfined, with only a light filtration.

 The Wine
A fascinating counterpoint to L.A.S. Vino’s ‘Wildberry Springs’ Chardonnay. Differences in sub-region, soil, climate and fermentation vessel give Barrels of Metricup an entirely individual personality. Metricup’s warm days build weight, richness and generosity, while the cooling afternoon breezes rolling in from the Indian Ocean preserve a wonderful sense of freshness and energy. There is plenty of Chardonnay richness here, but never heaviness: citrus, lemon and lime flow into lemon curd, ripe peach and stone fruit, underpinned by a lovely creamy texture from barrel maturation and lees work. The freshness provides the counterpoint, carrying everything through to a long, vibrant finish.

Made from certified-organic fruit and handled organically in the winery, this is a beautifully expressive interpretation of Metricup Chardonnay - generous, textural and richly flavoured, but with the freshness and precision that makes Margaret River Chardonnay so compelling.

2025 L.A.S. Vino 'Southern Seas' Chardonnay

Mike Bennie, The Wine Front “A distinct feel to the 2025 vintage in the southern climes of Karridale, is the explanation, and to be distinguished by coolness and maritime influence that shifts away from the dryer, warmer north. This wine spends time in amphora and oak. This has some nerve and pluck. The handrails are just-ripe stone fruit, sugared almonds, brine; the rungs made of wild honey, green apple, bergamot and yuzu. The weave pitch perfect, delivering a bit of volume with a cooling undertow of freshness. It sits up in the glass, drink with a spoon, watch it sizzle and dissolve in the following stanzas. It’s a wine of immense pleasure, deep chardonnay charisma, refreshment factor. Really onto something.”

 Ray Jordan “Creating a wine of brightness, tension, and clean natural acidity. After hand picking and whole bunch pressing, the free-run juice was fermented in a mix of new barriques and amphora. The result is a wine that displays delicacy, yet with deeply intense flavours of lemon meringue, fresh citrus, and subtle vanilla notes. Thoroughly beautiful wine.”

 Vineyard
Following several warm, dry vintages in Margaret River, Nic sought out a vineyard at the southern end of the Cape, where conditions are naturally cooler and shaped not only by the Indian Ocean, but also by the Southern Ocean. This dual maritime influence extends the growing season, producing fruit with naturally higher acidity, greater tension and layered texture.

In 2025, the contrast across the region was striking: fields in the south remained green and vibrant, while those further north were dry and golden. Increased moisture, greater cloud cover and cooling Southern Ocean breezes, combined with classic rich, gravelly loam soils, have delivered a Chardonnay that feels distinctly different. This site brings a fresh and compelling new expression to the L.A.S. Vino portfolio.

Winemaking
The fruit was hand-picked, chilled overnight and gently pressed as whole bunches, with only the free-run juice retained for fermentation. The juice was softly settled and racked off its heavier solids before fermentation in a combination of barrique (30% new) and amphora, where it matured for 11 months. The wine was bottled unfined and underwent only a light filtration, allowing the character of the vineyard and vintage to remain clearly expressed.

Wine
There is an immediate sense of coolness and precision to Southern Seas. Granny Smith apple, freshly cut lemon and lime lead the way, followed by wet stone, a subtle saline quality and an intriguing creamy richness. The palate is beautifully judged: elegant and silky smooth, yet wonderfully fresh and energetic. The amphora and bright natural acidity bring tension and mineral drive, while the barrel component provides just enough weight, texture and generosity without overwhelming the fruit.

There is something distinctly Chablis-like about its cool citrus, wet-stone minerality and saline freshness, but this is Margaret River Chardonnay with a little more flesh on its bones — think Chablis with a bit more oomph.
Fresh, mineral, silky and utterly delicious, Southern Seas provides a fascinating contrast to the richer, warmer expression of the Barrels of Metricup. Together, the two wines brilliantly demonstrate just how much vineyard location and maritime influence can shape Chardonnay within Margaret River.

2025 L.A.S. Vino 'CBDB' Chenin Blanc Dynamic Blend

Ray Jordan “Each year, Peterkin produces one of the most interesting takes on chenin blanc....The result is a wine that retains the beautiful aromatics of chenin with a slightly citrusy melon and apple tropical character, but then builds in a texture which combines richness and steeliness, delivering the wine with great poise and flair. Vineyard 
One of Margaret River’s earliest Demeter-certified biodynamic vineyards, this remarkable site at the northern end of the Cape challenges the conventional pursuit of uniformity in viticulture.
Rather than attempting to make every vine, bunch and berry behave in the same way, the vineyard is allowed to express its natural diversity. Native vegetation grows amongst the vines, animals move freely through the site and there is no cultivation or use of herbicides or pesticides. The result is a living, evolving ecosystem rather than a vineyard managed simply for maximum yield or consistency. That diversity was particularly evident in 2025. Chenin Blanc ripened at markedly different rates across the vineyard, providing fruit with varying levels of ripeness, acidity, flavour and texture. Rather than seeing this variation as something to correct, it became central to the wine.
This is the idea behind CBDB -Chenin Blanc Dynamic Blend: capturing the different expressions of Chenin Blanc from a single biodynamic site and bringing them together in one wine. The vineyard provides the variation; the blend provides the balance.

Winemaking
The fruit was hand-picked, chilled overnight and carefully hand-sorted before being lightly whole-bunch pressed at cool temperatures, very gently and slowly over several hours. To introduce another layer of flavour and texture, a portion of the fruit was left on its skins for 40 hours before pressing. The juice was then allowed to settle naturally before fermentation. Malolactic fermentation was avoided, preserving Chenin Blanc’s natural acidity and freshness, while fortnightly lees stirring added texture and breadth. The finished wine was bottled unfined and with only a light filtration. The combination of differing levels of fruit ripeness, whole-bunch pressing, extended skin contact and lees ageing creates the ‘Dynamic Blend’ - a wine designed to capture the diversity and energy of this extraordinary biodynamic vineyard.

2025 L.A.S. Vino 'SBDB' Sauvignon Blanc  Dynamic Blend

It defies the varieties inherent overtness and straps in serious minerality, a compact and yet concentrated flavour profile, scintillating acidity. appropriate, substantial savouriness but only as a harmonious counter to subdued but refreshing, just-ripe tropical fruits and laid back citrusy freshness. It clatters across the palate with its brine, it tightens on gentle trim of chalky pucker, it finishes with more brine and a good dose of pink grapefruit sizzle. Utter charm coupled to proper complexity. A serious contender for one of the greats of the variety in this wide, brown land. I’m gunna go to that place…”

Vineyard
A certified organic and biodynamic site at the northern end of the Cape, and a vineyard unlike almost any other in Margaret River. For several years, the site has been left almost entirely to its own devices: unpruned, untamed and without trellising. The vines sprawl freely across the landscape, while pigs, geese, guinea fowl and cows roam amongst them. The vineyard faces north, with a small creek running through its centre, while native flowers and plants flourish beneath the vines. There are no herbicides, no pesticides and no cultivation. It is dynamic in every sense of the word - biodynamic, constantly evolving, and full of attitude, energy, and new ideas. More than simply an unconventional vineyard, it offers a fascinating glimpse at what a different approach to viticulture might look like. For the 2025 vintage, the vines were left completely unpruned, resulting in an extraordinarily low yield of just one tonne per hectare.

Winemaking
All fruit was hand-picked and cooled overnight before being carefully hand-sorted the following day. A portion was cold whole-bunch pressed to preserve purity, freshness and line, while the remainder was destemmed and left on skins for 24 hours in a cool room to build texture, flavour and complexity. After settling, the juice was fermented in a combination of clay amphora and large-format oak. The wine moved naturally through various stages of malolactic fermentation during its élevage, with sulphur added only shortly before blending. The objective throughout was not to impose a particular winemaking style, but to create a beautifully balanced wine capable of capturing the wonderfully wild character of this remarkable vineyard.

Wine
Forget almost everything you expect from Sauvignon Blanc. This isn't a wine defined by varietal character; it is defined by its vineyard. Much of its life was spent slowly evolving in barrel and amphora, fermentation and maturation seemingly flowing into one another. The result is wonderfully textural and complex, with layers of lemon and lime, passionfruit and citrus, wrapped around a distinctive sea-salt minerality. There is richness without heaviness, texture without losing freshness, and an intriguing savoury quality running beneath the fruit. Each mouthful seems to reveal something different. This is Sauvignon Blanc viewed through the lens of an extraordinary site rather than the conventions of the grape variety - wild, complex, saline and beautifully individual. A wine with a genuine sense of place, and for us, one of the most exciting wines of the vintage.

2025 L.A.S. Vino Pinot Noir

Ray Jordan “This is Peterkin’s first crack at making pinot noir, following the inspiration of working a vintage in Burgundy. I have to say, it’s a mighty good first-up effort.... A wine that is bright and fresh, with lovely pure red fruit notes, and structure coming from the whole bunch ferment. It’s a thoroughly enjoyable example that demonstrates that, in good years, Margaret River can turn out some very smart pinot noir.”

Vineyard
A first for L.A.S. Vino. Following a recent vintage in Burgundy, Nic returned to Margaret River inspired to explore what could be achieved with Pinot Noir from the family estate. The vineyard lies just three kilometres from the Indian Ocean, planted on granite and gravelly loam soils. A gentle south-facing slope rolls down towards the Willyabrup Brook, while the close proximity to the ocean provides an important cooling influence. At around 40 years of age, these vines are not only amongst the oldest Pinot Noir vines in Margaret River, but also amongst the few that remain in a region now overwhelmingly associated with Chardonnay and Cabernet Sauvignon. The vineyard is planted at high density using two separate clones. Competition between the closely planted vines naturally restricts yields, producing smaller quantities of concentrated, intensely flavoured fruit. For a producer whose wines are so often shaped by unusual vineyards and a willingness to challenge Margaret River convention, this rare parcel of old-vine Pinot Noir proved simply too intriguing to ignore.

Winemaking
The fruit was hand-picked, chilled overnight and carefully hand-sorted before being divided into three separate ferments, each designed to contribute something different to the final wine.
One parcel was fermented with 30% whole bunches, bringing structure and savoury complexity. A second underwent 100% whole-berry fermentation, emphasising perfume and aromatics, while the third was fermented from crushed berries, providing greater weight and depth. All three batches underwent a five-day cold soak before fermentation and remained on skins for approximately 20 days. The wine was then gently pressed to barrel, where it matured for 11 months before the individual components were blended and bottled. The result brings together the structure of whole bunches, the fragrance of whole berries and the weight of crushed fruit - three different expressions combined to create a complete Pinot Noir.

Wine
Light on its feet, wonderfully aromatic and enormously drinkable. This is Pinot Noir built around freshness and perfume rather than extraction or weight. There is a lovely delicacy to the wine, but certainly no shortage of flavour. 
Delicious in its youth, but with sufficient structure and balance to evolve beautifully over the next five to ten years. A fascinating debut and a very different expression of Margaret River - old-vine Pinot Noir, Burgundy-inspired but unmistakably L.A.S. Vino.

2023 L.A.S. Vino Pirate Blend

Ray Jordan “I was fascinated to see what Peterkin would do with this blend of Portuguese varieties - touriga nacional, tinta cão, and sousão, from the 2023 vintage. To say I was not disappointed is an understatement. It is a brilliant wine loaded with rich, vibrant fruit, displaying slightly spicy plummy notes and dark chocolate richness. There’s energy and life coursing through it, and that silky-soft, satiny finish is quite exquisite. I don’t think I could keep my hands off this wine. It’s screaming out to be drunk now, but you could certainly leave it if you wished.”

The Story
Pirates were the outlaws. The rule-breakers, fighters and adventurers who lusted after life with gusto. They drank with equal enthusiasm - liquor soothed the heat of the sun, made dark nights brighter and provided comfort during months spent at sea. The Pirate Blend is an ode to those salty sea dogs we have left behind and those still sailing today. To those willing to break the rules, challenge convention and live according to little more than passion and the pursuit of personal desire. It is also a fitting philosophy for the wine itself: three Portuguese varieties growing in Margaret River, blended without much concern for convention.

Vineyard & Vintage
The fruit comes from 40-year-old, dry-grown vines in Yallingup, planted on gravelly loam soils. The 2023 vintage provided excellent conditions, with warm, even weather allowing the fruit to ripen steadily and uniformly while retaining balance and freshness. Three Portuguese varieties form the blend, each bringing something quite different: Touriga Nacional (66.6%) provides the structure, depth and backbone; Tinta Cão (26.6%) contributes perfume, finesse and aromatic lift; while Sousão (6.9%), one of the darkest-skinned varieties imaginable, brings extraordinary colour, intensity and a final flourish of dark fruit.
And, as the pirates might have said: the darker the berry, the sweeter the fruit.

Winemaking
All fruit was hand-picked before undergoing both bunch and berry selection. Following fermentation, the wine spent 18 months maturing in barrique, allowing the individual components of the blend to soften, integrate and develop complexity. The finished wine was bottled under Diam and individually hand-waxed.
