Vineyard
One of Margaret River’s earliest Demeter-certified biodynamic vineyards, this remarkable site at the northern end of the Cape challenges the conventional pursuit of uniformity in viticulture.
Rather than attempting to make every vine, bunch and berry behave in the same way, the vineyard is allowed to express its natural diversity. Native vegetation grows amongst the vines, animals move freely through the site and there is no cultivation or use of herbicides or pesticides. The result is a living, evolving ecosystem rather than a vineyard managed simply for maximum yield or consistency. That diversity was particularly evident in 2025. Chenin Blanc ripened at markedly different rates across the vineyard, providing fruit with varying levels of ripeness, acidity, flavour and texture. Rather than seeing this variation as something to correct, it became central to the wine.
This is the idea behind CBDB -Chenin Blanc Dynamic Blend: capturing the different expressions of Chenin Blanc from a single biodynamic site and bringing them together in one wine. The vineyard provides the variation; the blend provides the balance.
Winemaking
The fruit was hand-picked, chilled overnight and carefully hand-sorted before being lightly whole-bunch pressed at cool temperatures, very gently and slowly over several hours. To introduce another layer of flavour and texture, a portion of the fruit was left on its skins for 40 hours before pressing. The juice was then allowed to settle naturally before fermentation. Malolactic fermentation was avoided, preserving Chenin Blanc’s natural acidity and freshness, while fortnightly lees stirring added texture and breadth. The finished wine was bottled unfined and with only a light filtration. The combination of differing levels of fruit ripeness, whole-bunch pressing, extended skin contact and lees ageing creates the ‘Dynamic Blend’ - a wine designed to capture the diversity and energy of this extraordinary biodynamic vineyard.
