Stuart McCloskey, tasted 10 June 2026 "The 2025 Uovo Chardonnay continues Larry Cherubino's fascinating exploration of texture, purity and terroir. Fermented and matured in a clay-cement egg (Uovo), this is Chardonnay stripped back to its essentials – no oak, no winemaking cosmetics, just high quality fruit, a strong sense of place and remarkable precision. The continual movement of the lees within the vessel creates a wine of extraordinary detail and mouthfeel whilst preserving freshness, tension and energy. I must say, the presentation is equally stripped back. Understated, elegant and utterly distinctive, it looks fabulous ‘en-magnum’.
The bouquet is beautifully lifted, revealing white peach, nectarine and preserved lemon, intertwined with notes of fresh ginger, sea spray and crushed chalk. There is an appealing savoury edge that adds complexity without detracting from the wine's crystalline fruit profile. Unmistakably Margaret River - impossible to miss.
The palate is linear, energetic and exceptionally refined. Layers of stone fruit and citrus glide effortlessly across the palate before giving way to a distinctive chalky mineral texture. The constant lees suspension within the egg fermentation vessel imparts remarkable breadth and texture, yet the wine remains taut, focused and driven by a fine line of acidity. Saline notes linger through the finish alongside hints of seashell, citrus oil and ginger, adding persistence, tension and an undeniable sense of place. A compelling Chardonnay that marries power with restraint. Sophisticated, textural and effortlessly drinkable. Great wine from a great vintage. Serve cool rather than fridge cold and, if possible, from Zalto Burgundy stemware (or similar). Delicious today, but with the balance, concentration and acidity to provide immense pleasure over the next decade."
