Fermoy Reserve Cabernet Sauvignon 2015

Stuart McCloskey, tasted 18th February 2026 "Heralding from the high-quality 2015 vintage, this wine translates beautifully in the glass. I love the bouquet, which deftly straddles the styles of its birthplace and the Left Bank of Bordeaux.
Old-school pen ink, iodine, and fresh pencil shavings lead the way, followed by truffle, damp cellar, piping tobacco, and cigar box. There’s a subtle marine edge of nori, then violets, blackcurrants, and dried rose petals, with hints of dried mint and fading cassis, all underscored by a fine seam of graphite. It feels packed with freshness. The palate is medium-bodied and exquisitely balanced — balletic in its delivery. A rock-solid backbone of acidity provides lift and precision. The overriding impression is one of ineffable completeness: poised, nuanced, and sophisticated. A very smart wine indeed.
Drink now through 2035 however, I would be inclined to enjoy it within the next three to five years, as I am not convinced further ageing will add significant complexity. Decant for an hour. Sampled using Zalto Bordeaux glass."
